Hello all, I know my husband promised our next recipe to be a roast, however, our friend Angela sent us a delicious recipe for oven roasted potatoes. It sounds great. Oven Roasted Potatoes
Ingredients
* 8 small baking potatoes
* 1 onion, sliced in rings
* 1 ½ tsp sea salt
* ¼ tsp ground black pepper
* 1 tsp dried oregano leaves
* ½ cup Old Village olive oil
* 1 1/3 cup water
Preparation
Peel the potatoes and cut them into quarters. In a square pan, add
potatoes, onions, salt, pepper, oregano, olive oil and water. Mix well.
Cover pan with foil wrap. Bake in 400F (200C) oven for 1 hour and 10
minutes. Uncover pan, and bake for another 10 minutes.
It's easy, fast and tasty! Makes 4 servings. Excellent as a side dish, or
as a main dish served with feta cheese, salad and hard boiled eggs.
